Amanda’s Potato Pancake

2 lbs of Potatoes
1 Red Onion
1 clove of garlic
2 Eggs (unbeaten)
2 tbsp of flour
1 teaspoon of salt
½ teaspoon of pepper
Grated potatoes, onion and garlic. Squeeze out excess water. Combine with Eggs, Flour, S&P into a large bowl. Heat pan with oil and fry like a pancake.
