Meal Planning during Lent

With Lent around the corner, I wanna get all my recipe together now because I will not be meal planner from now till the New Year.  It's really pointless to spend all that time creating a menu if we eat the same 10 dinners over and over again.

Here is a list of lenten meals that I will be cooking; if you have ANY recipe to share my DH would love you lol

Pan-Fried Scallops with Garlic Angel Hair Pasta
Over Baked Fish with veggies
Tune Pita Pockets
Potato Pancakes
Eggplant Pesto Pasta
Split Pea Soup (hamless of course)
Black Bean Enchiladas
Slow Cooker Three Bean Chili
Navy Bean Soup
Veggie Gyros
Black Bean Nachos
Fisherman's Stew
Fish Tacos
Veggie Lo Mein

so im taking a guess you cant eat meat during the entire lent..when does it start? and taking another guess and saying it ends on christmas?
sounds like you have a nice array of things you can make during this time..
can you have pizza? even could trying making it homemade..we actually have english muffin pizzas last week..
you can make like a veggie stir-fry and serve it over rice or pasta? yumm..

This looks really good! I'm trying to find more Lentin recipes since we're still new! Mind posting your pan-fried scallops and garlic angel hair pasta recipe? My husband would love it!

I don't know if you all like spicy stuff but I posted a recipe on my blog for Spicy Thai Noodles. They are so good! Here's that recipe:
Spicy Thai Noodles

1lb angel hair pasta
1/2 c sugar
3/4 c rice wine vinegar
1/4 c sesame seed oil
3/4 c soy sauce
1/4 c mongolian fire oil
1/4 tsp crushed red pepper (use more or less for your desired spiciness)

Mix together for marinade/sauce, approx 2 cups.

Optional ingredients:
3/4 c chopped peanuts
1 bunch cilantro chopped
1 bunch green onion chopped
meat of your choice (I use shrimp when fasting)
(use 3/4 c of marinade on meat 1-2 hours prior to cooking)

Cook pasta as directed on box - drain
add cilantro/green onion and nuts
pour sauce on top - add meat - mix, eat warm or chill

Britt- Yes we try not eat meat, diary, eggs (anything that comes from an animal) for 40 days, which takes us to Christmas (minus Thanksgiving). Everybody fast differently, the most important thing is every year try to make fasting a little more than last year.
